Ingredients:

  • 1.2 pounds or 2 medium eggplant
  • 3 tbsp of olive oil
  • ½ tsp of salt
  • ½ tsp of black pepper

Preheat your oven to 240°C or 450°F, then line a baking sheet with parchment paper or leave it as is, and set it aside. Wash the eggplants well, then pat dry, and slice them into large cube pieces at about an inch. Place them in a large mixing bowl, then drizzle with some oil, and season them with salt and pepper.
