Step 1
Preheat your oven to 425°F and line a baking sheet with aluminum foil, then set it aside. Clean the carrots and peel off the skin, then chop the carrots into 3-inch thick long strips. In a large mixing bowl, add the melted butter, garlic, dried thyme, salt, and pepper, then stir everything together until combined, and add the sliced carrots. Toss them until well coated, then sprinkle the parmesan, and give them another toss until evenly coated.

Transfer the carrots to the prepared baking sheet, then spread them in an even layer, and place them in the preheated oven. Allow them to bake for about 25 minutes until tender making sure to stir them halfway through the cooking time, then season with more salt and pepper to taste if needed, and sprinkle with freshly chopped parsley. Serve and enjoy!
