Mashed potatoes are one of my all-time favorite side dishes especially when serve along with delicious BBQ ribs! Usually, I serve mashed potatoes with only some butter and salt, and it was always a winner, but when I discovered this version by The Slow Roasted Italian on YouTube, I never tried any other recipes, because this is so delicious and flavorful that I wished I knew about it sooner! Surely, when you serve this to your family, they’ll love it, too. Ingredients:

  • 2 24-ounce packages or about 5 cups of Bob Evans garlic mashed potatoes
  • ¼ cup of sour cream
  • ¼ cup of mayonnaise
  • 1-ounce packet of ranch seasoning and salad dressing mix
  • 2 cups of mild cheddar cheese, shredded
  • 1½ cups of cooked bacon, crumbled
  • 1 celery rib, finely diced
  • 2 scallions, sliced

First, prepare the mashed potatoes according to the package instructions, then let them cool down, and transfer them to a large mixing bowl. In the mixing bowl, add the sour cream, mayonnaise, and ranch dressing mix, then stir them all together until well combined, add the cheese, bacon, celery, and scallions, and give them a good stir until combined and incorporated. Cover the bowl, then place it inside the refrigerator, and let it chill for at least two hours. Serve and enjoy!
