Step 1
Preheat 350°F, then grease a 9×13-inch baking dish with a nonstick cooking spray, and set it aside. For the crust, add the cake mix, melted butter, and large egg in a large mixing bowl, then fold them until well combined, and reserve roughly 1 cup of the mixture for the topping later. Transfer the remaining crust mixture into the prepared baking dish, then spread it evenly, and press it firmly to the bottom.
Step 2
In another large mixing bowl, add the canned pumpkin, evaporated milk, granulated sugar, pumpkin pie spice, and large eggs, then whisk everything until smooth and combined, and pour it over the crust evenly. For the topping, add the reserved crust mixture, light brown sugar, and ground cinnamon in a medium-sized mixing bowl, then mix them until thoroughly combined, and sprinkle it over the filling layer.
Step 3
Place it in the preheated oven, then let it bake for about 45 to 50 minutes or until the top is light golden brown, and allow it to cool on a wire rack for 1 hour. Cover it with plastic wrap or aluminum foil, then place it in the refrigerator, and let it chill for at least 2 hours or until firm. Cut into bars, then serve, and enjoy!
