Fall season is for pumpkins, and these pumpkin cheesecake brownies from El Mundo Eats on YouTube are the perfect treat for this season! Ingredients:

Pumpkin Cheesecake:

  • 4 oz full-fat cream cheese, room temp
  • 1/2 cup pumpkin puree, room temp
  • 1 large egg, room temp
  • 1/4 cup granulated sugar
  • 1/2 tsp pumpkin pie spice mix

Dry Ingredients:

  • 2/3 cup all-purpose flour
  • 1 tsp pumpkin pie spice mix
  • 1/2 tsp salt
  • 1/2 tsp baking powder

Wet Ingredients:

  • 8 oz semi-sweet chocolate, chopped
  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup pumpkin puree, room temp
  • 2 large eggs

Directions:

Step 1

Preheat your oven to 350 degrees F and grease your 8 x 8-inch baking pan. Set it aside. Next, make the pumpkin cheesecake mixture. In a large mixing bowl, add 4 oz full-fat cream cheese, 1/4 cup sugar, 1/2 cup pumpkin puree, 1/2 tsp pumpkin pie spice mix, and 1 large egg. Mix well and set aside. Moving on with the dry ingredients, combine 2/3 cup all-purpose flour, 1/2 tsp baking powder, 1/2 tsp salt, and 1 tsp pumpkin pie spice mix in a large bowl and set aside. Lastly, make the wet ingredients mixture. Add the chopped chocolate to a medium bowl along with 1/2 cup butter, Melt it in the microwave and mix well.

Step 2

Once the melted chocolate has cooled down, add 1/2 cup of pumpkin puree, 1/2 cup sugar, 1/2 cup brown sugar, and 2 large eggs. Mix well, then fold in the dry ingredients. (Do not overmix). Reserve 1/4 cup and set it aside, then pour the batter into the prepared baking pan. Dollop the pumpkin cheesecake mixture on top, spread it nicely, then add the reserved chocolate batter, swirling it in with a toothpick. Place it in the preheated oven and bake for 33 minutes. After baking, let it cool completely, then slice into bite-size squares.
