Whenever the Fall season arrives, I always make sure to bake a delicious pumpkin cake because it’s one of the best ways to incorporate pumpkin into your food, especially if you’re not a big fan of that certain ingredient. You wouldn’t even notice the pumpkin and you’ll love it if you don’t already, plus, it’s super easy to make so it’s perfect even for beginner bakers.

If you want this recipe to be easier to make, you can use canned pumpkin puree, but if you have a garden and you managed to harvest lots of fresh pumpkins, then you can make this cake from scratch instead. Preheat your oven to 350°F, then grease and line an 8-inch baking pan with parchment paper, and set it aside. In a mixing bowl, add the pumpkin, eggs, sugar, and oil, then give them a good whisk until combined, and set the mixture aside.

In another bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, cloves, and nutmeg until well combined, then add in the wet ingredients, and continue to mix until well incorporated and no flour steaks left.

Pour the batter into the prepared pan, then smooth out the top, and place it in an oven preheated at 350°F. Allow it to bake for about 30 to 35 minutes or until a toothpick inserted at the center comes out clean, then set the cake aside, and let it cool completely. While waiting for the cake to cool, prepare the frosting.
Step 4
In a mixing bowl, add the butter and powdered sugar, then beat them until smooth and light, and then add the cold cream cheese and vanilla. Continue to mix on a high speed until thick and creamy, then spread the cream cheese frosting over the cooled cake, and serve. Enjoy!
