Step 1
Cut the potatoes into thin slices, then place them in a large bowl filled with cold water, and soak them for a couple of minutes to remove the starch. While the potatoes are soaked, place a frying pan over medium-high heat, then heat the oil, add a small piece of butter, and let it melt. Add the chopped onions, then stir and saute, season them with your favorite spice blend, and continue stirring to combine.
Step 2
Add some Worcestershire sauce, then lower your heat to medium, and continue to cook until caramelized then turn off the heat. In a large bowl, add the cream cheese, sour cream, and caramelized onions, then mix them well to combine, add the bacon along with a more spice blend, and keep mixing until evenly combined.
Step 3
Transfer the potatoes to a plate or tray lined with a paper towel, then put another paper towel on top, and press them down until dry. In a large bowl, add the flour, cornstarch, spice blend, then stir them well until uniform, and in a separate bowl, mix the eggs and spice blend. Pour the egg mixture over the potatoes, then toss them until evenly coated, and set them aside.
Step 4
Heat the oil in a pan, then dredge the potatoes in the flour mixture shaking off the excess, and deep fry them one at a time for about 3 to 4 minutes or until nice and crispy. Remove the cooked potatoes with a slotted spoon and transfer them to a wire rack to drain off the excess oil, then serve them with the prepared dipping sauce on the side, and enjoy!
