Ingredients:

  • 4 medium size potatoes
  • 4 tbsp cornstarch
  • 1 tbsp white sugar
  • 1 tsp salt
  • a pinch of white or black pepper
  • 8 tbsp mozzarella cheese
  • vegetable oil for frying

Directions:

Step 1

Peel and wash 4 medium size potatoes, then chop them into chunks. Next, pour enough water into the steamer. Turn on the stove to high heat until the water boils, then lower it to medium heat. Put the lid on and steam the potatoes on medium heat for about 15 to 20 minutes. After 20 minutes, remove it from the steamer, then add 4 tbsp cornstarch (you don’t have to wait for the potatoes to cool down, you can add the starch right away) followed by 1 tbsp white sugar, 1 tsp salt, and a pinch of pepper powder. Mash the potatoes. After mashing, divide it into 8 pieces by forming them into a ball with your hands, then flattening them evenly. (Leave the edge thicker.) After flattening, add 1 tbsp of shredded mozzarella cheese, then push the edges to the center, closing it. Now, make it round again, then flatten. Do the same process with the rest of the mashed potato.

Next, add oil to a pan over medium-low heat. Fry the potato pancakes on each side until they become golden brown. After frying, transfer them to a paper towel-lined plate to drain the excess oil.
