Ingredients for Piña Colada Macaroons:

  • ½ cup of dried sweetened pineapple, finely chopped, plus more for garnish
  • ½ cup or 120ml of sweetened condensed coconut milk or regular sweetened condensed milk
  • 1 large egg
  • 1 tsp of vanilla extract
  • ¼ cup or 60ml of aged rum or coconut rum
  • ½ tsp of salt
  • 14 oz bag of sweetened shredded coconut
  • 4 oz of white chocolate, chopped
  • Lime zest, grated

Step 1

Preheat your oven to 325°F, then line a baking sheet with parchment paper, and set it aside. In a large mixing bowl, add the condensed milk, egg, vanilla extract, rum, and salt, then whisk them together until combined.

Step 2

Next, add the shredded coconut and chopped pineapple, and keep mixing until well combined. Scoop 2½ tablespoon-sized balls of the mixture, then place them on the prepared baking sheet and reshape them as needed.

Step 3

Place them in the preheated oven, then let them bake for about 25 minutes, and while waiting, prepare the white chocolate. Chop the chocolate, then put them in a microwave-safe oven, and heat it until melted making sure to stir in between intervals.

Step 4

Let the melted chocolate cool for a bit, then transfer it to a piping bag, and drizzle it over the baked macaroons. Grate the lime zest over them for garnish, then top with more sliced dried pineapples, and serve. Enjoy!
