Ingredients:

Cake

  • 1 (15.25 ounces) box of yellow cake mix
  • 1 stick or ½ cup of unsalted butter, softened
  • 1 (14 ounces) can of mandarin oranges, drained, ½ cup of juice reserved
  • 4 large eggs
  • 1 tsp of vanilla extract

Topping

  • 1 (4 ounces) box of vanilla instant pudding mix
  • 1 (20 ounces) can of crushed pineapple, juice reserved
  • ½ cup of powdered sugar
  • 4 ounces of Cool Whip
  • Mandarin orange slices, for garnish

Directions:

Step 1

In a large mixing bowl, add the butter, half a cup of mandarin orange juice, eggs, and vanilla, then beat them together using a handheld mixer over medium-high speed for about 3 to 4 minutes until well combined. Add the drained oranges to the mixture, then gently stir them together until incorporated and combined making sure to leave some orange chunks. Pour the cake batter into a 9 by 13 inches baking dish greased with nonstick cooking spray, then spread it nicely and evenly, and put it in a preheated oven at 350°F to bake for about 20 to 25 minutes.

Step 2

Once done baking, remove the cake from the oven, then let it cool down completely, and then prepare the topping. In a mixing bowl, add the juice of the drained crushed pineapple, then add the instant vanilla pudding mix as well, and stir them together to combine before stirring in the powdered sugar. Once well combined, fold in the Cool Whip whipped topping, then add the drained pineapple, and stir them together until well combined. Spread the topping over the cooled cake, then put it inside the refrigerator to set for at least 3 to 4 hours. Slice the cake into 12 pieces, then garnish each slice with a slice of mandarin orange, serve, and enjoy!
