I’ve never been much into milk cakes because prefer chocolate or fruit-flavored ones, but when I tried this three-milk cake by The Cooking Foodie on YouTube, I instantly changed my mind. It was one of the best things I have ever tried and will definitely try again.

Ingredients for Peanut Butter Three-Milk Cake:

Cake

  • 1 cup of flour
  • 2 tsp of baking powder
  • ¼ tsp of salt
  • 1/3 cup + 1 tbsp of natural peanut butter
  • ¾ cup of sugar
  • eggs, separated
  • 1 tsp of vanilla extract
  • 1/3 cup of milk

Milk Mixture

  • 7 ounces of sweetened condensed milk
  • ¾ cup of evaporated milk
  • 1/3 cup of whole milk

Frosting

  • 1¼ cups of heavy whipping cream
  • 4 tbsp of powdered sugar
  • 2-3 tbsp of peanut butter
  • 1 tsp of vanilla extract

How to Make Peanut Butter Three-Milk Cake:

Step 1

Preheat your oven to 340°F, then line a 9×13-inch baking pan with parchment paper, and lightly grease it with nonstick cooking spray before setting it aside. In a large mixing bowl, add ½ cup of sugar followed by the egg yolks, then beat them until pale in color and double in volume, add the peanut butter, and continue beating until well combined.

Step 2

Add the milk and vanilla extract, then mix them until combined, sift over the flour, baking powder, and salt, and continue mixing to combine, set it aside. In another bowl, add the egg whites, then beat them over high speed until foamy, and then gradually add the remaining cup of sugar while beating continuously until stiff peaks form.

Step 3

Fold in 1/3 of the egg white mixture to the batter, then pour the batter into the egg white, and gently fold until combined. Pour the mixture into the prepared pan, then place it in the preheated oven, and allow it to bake for about 25 minutes or until a toothpick inserted at the center comes out clean.

Step 4

Release the cake from the pan, then let it cool on a wire rack, and prepare the three-milk syrup while waiting for the cake to cool. Add the 3 milk to a bowl, then whisk them until combined, put the cake back into the pan, and poke holes all over them before slowly pouring in the three-milk syrup. Set the cake aside and let it soak in the syrup for at least 1 hour or overnight.

Step 5

For the frosting, put the peanut butter, sugar, and vanilla extract in a large bowl, then beat everything together until smooth, add the heavy cream, and keep whipping until stiff peaks form. Release the cake from the pan once more, then pour the frosting over the top, and spread it evenly. Put it in the fridge for at least 1 hour, then cut it into squares, and serve. Enjoy!
