Crust

  • 2 cups of pretzel sticks
  • 3 tbsp of light brown sugar, packed
  • 5 tbsp of unsalted butter, melted and slightly cooled

Filling

  • 6 ounces of cream cheese, softened
  • ¾ cup of creamy peanut butter
  • ½ cup powdered sugar, sifted
  • 2 tbsp of maple syrup
  • 1 tsp of pumpkin spice pie
  • ½ cup of heavy cream
  • ½ tsp of vanilla extract

Step 1

Place the oven rack in the middle, then preheat your oven to 325°F, and grease a 9-inch pie plate with nonstick cooking spray. In a large Ziploc bag, add the pretzel sticks and brown sugar, then seal it securely, and crush them into coarse crumbs using a rolling pin.

Step 2

Transfer the mixture to a medium-sized mixing bowl, then add the melted butter, and stir them until combined. Transfer them to the prepared pie plate, then spread them out evenly, and press down firmly to the bottom and sides. Place it in the refrigerator, then let it freeze for about 30 minutes.

Step 3

Put it in the oven to bake for about 12-15 minutes or until fragrant and starting to brown. Once done baking, set it aside and let it cool completely, then in another mixing bowl, add the cream cheese, peanut butter, powdered sugar, maple syrup, and pumpkin pie spice, and mix them until smooth and combined.

Step 4

Add the heavy cream and vanilla extract, then keep mixing until combined and fluffy, and transfer the filling to the cooled crust. Spread it out in an even layer, then place it in the refrigerator to chill for at least 2 hours or freeze for about 45 minutes until the filling is firm. Cut into slices, then top it with whipped cream if desired, and serve. Enjoy!
