Ingredients for Peanut Butter Banana Icebox Pie:

  • 2 cups of cinnamon graham cracker crumbs, about 15 sheets
  • ½ cup of honey-roasted peanuts, finely chopped
  • ½ cup of butter, melted
  • (4 oz) semisweet chocolate baking bar, chopped
  • 2 cups of whipping cream, divided
  • (8 oz) package of cream cheese, softened
  • 1 cup of creamy peanut butter
  • ½ cup of light brown sugar, lightly packed
  • 2 tsp of vanilla extract
  • 2 large bananas, sliced

Toppings

  • Sweetened whipped cream
  • Chocolate syrup
  • Honey-roasted peanuts, chopped

How to Make Peanut Butter Banana Icebox Pie:

Step 1

Preheat your oven to 350°F, then mix the graham cracker crumbs, honey-roasted peanuts, and butter in a larger mixing bowl until incorporated. Transfer the mixture to a 9-inch pie plate, then press it down the bottom and up the sides firmly, and place it in the preheated oven.

Step 2

Let it bake for about 10 to 12 minutes or until lightly browned, then transfer it to a wire rack without removing it from the pie plate, and let the crust cool completely for about 30 minutes.

Step 3

Add the chocolate and ½ cup of the whipping cream in a heat-proof bowl, then heat it in the microwave for about 1½ minutes at 30-second intervals until completely melted, and whisk them until smooth and combined.

Step 4

Pour the chocolate mixture over the cooled crust, then spread it evenly, and set it aside. In a separate mixing bowl, add the cream cheese, creamy peanut butter, and ¼ cup of whipping cream, then beat them over medium speed until light and fluffy.

Step 5

In another bowl, beat the vanilla extract and remaining 1¼ cups of whipping cream over high speed until stiff peaks form, then fold 1/3 of this whipped cream mixture into the peanut butter mixture until loosened and combined. Add the remaining whipped cream mixture, then continue folding until fully combined, and set it aside.

Step 6

Arrange the banana slices over the chocolate layer, then spread the peanut butter cream over the bananas evenly, and cover the pie with plastic wrap or a pie plate lid. Place it in the refrigerator, then let it chill for about 8 hours, and top it with whatever you want if desired. Serve and enjoy!
