I have tried different cheesecake versions before and they are simply amazing no matter the flavor, but one that tops them all is this peach cobbler cheesecake by Food Nerd Rockstar on YouTube. It’s incredibly delicious and has the right balance of sweet and creamy that you just wouldn’t want to stop eating it.

This dessert is perfect for any occasion party, or even on an ordinary day. Trust me, there’s no way that you can fail making this recipe because it’s so easy that you can get it on your first try. Step 1
Preheat your oven to 180°F, then toss the sliced peaches with rum and brown sugar until well coated, and transfer the mixture to a baking dish spreading it evenly. Place it in the preheated oven, then let it bake for about 8 to 10 minutes, and set it aside to cool down.
Step 2
In a separate mixing bowl, add the cream cheese, heavy cream, sugar, eggs, vanilla extract, and lemon zest, then beat them until smooth and combined, and set the filling aside. Pulse together the digestive biscuits and melted butter in a food processor until crushed and combined, and set aside.
Step 3
Line a springform pan on the bottom and sides with parchment paper, then transfer the mixture, and press it down firmly. Pour in the cheesecake mixture spreading it evenly, then add the baked peaches on top, and drizzle the peach juices.
Step 4
In a separate bowl, mix together the flour, brown sugar, cold butter, and rolled oats until crumbly and combined, then sprinkle over the peaches, and bake the cheesecake for about 40 minutes at 180°C or 356°F.
Step 5
Once done baking, turn off the oven, then leave the cheesecake inside for another hour, and allow it to cool to room temperature for about 2 hours. Once cooled, transfer the cheesecake to the refrigerator, then let it chill for up to 24 hours, and serve. Enjoy!
