This super delicious pan-fried potatoes from Cooking With Claudia on Youtube is a recipe you’ll always want. You can match these potatoes with eggs for brunch or with some chicken over dinner; this potato recipe will become an absolute hit with the family either way. Ingredients:

  • 6 medium gold potatoes
  • 4 slices of bacon
  • 1 medium onion
  • salt and pepper to taste
  • 3 cloves of garlic
  • 1/2 tsp smoked paprika
  • fresh parsley

Directions:

Step 1

Place the washed potatoes in a pot with salted water and cook them for about 15 minutes until they get a little soft. While the potatoes are boiling, heat a cast iron skillet over medium heat and cook some bacon. Set it aside once it becomes crispy. Next, saute some onions in the same pan where you fry the bacon. Once the onions get caramelized and fragrant, set them aside. Going back to the potatoes, cut each into four pieces, making sure all are equal.

Step 2

After this, melt some butter in a pan. Once the butter has melted, add the cut-up potatoes into the pan. Fry them for two to three minutes on each side. (The potatoes should be bright and golden brown.) Next, add the bacon and onions and mix them. Add some minced garlic for extra flavor and season with salt and pepper. (Taste it and add some salt if needed.) Add some smoked paprika and mix everything together and finish with some fresh parsley.
