Preheat your oven to 450 degrees Fahrenheit.
Slice the small potatoes in half while the larger ones into quarters, so that the herbs and spices will stick easily to them. Place them in a large bowl.
Add 2 to 3 tablespoons of melted butter and 2 to 3 tablespoons of olive oil. These will help the seasonings to stick to the potatoes. Season your potatoes with sea salt flakes and freshly ground black pepper.
Add one tablespoon of chopped parsley, a teaspoon and a half of garlic powder, and a tablespoon of freshly chopped thyme leaves. Toss everything until the potatoes are well coated.
Transfer the seasoned potatoes to a baking tray lined with parchment paper. You can also use a silicone mat. Spread it evenly in one layer. Using small tongs, turn the potatoes with the inside facing upwards. Cover with a large sheet of foil.
Place inside the preheated oven and bake covered for about 18 to 20 minutes or until fork tender. Once done, take off the foil and turn your broiler to the low setting. Let the potatoes broil for about 7 to 10 minutes until golden brown on top.
Garnish the potatoes with freshly chopped parsley and thyme, and grated parmesan cheese on top. Serve and enjoy!
