Preheat the oven to 300F.
Wipe the beef with a paper towel to remove excess moisture, then score the back side (bone side) using a knife. This will help with the pullback as the beef cooks. Drizzle with olive oil and coat all sides.
Make the rub. In a small bowl, add 2 tablespoons of coarse black pepper, 1 tablespoon of salt, 1 tablespoon of Lawry’s seasoned salt, 1 tablespoon of granulated garlic, 1 teaspoon of granulated onion, 1 teaspoon of paprika, and 1.5 teaspoons of brown sugar. Mix until well combined.
Place the ribs into a chopping board. Sprinkle the rub on all sides and press them onto the skin. Dab the rib onto the excess seasonings on the cutting board.
Line a rimmed baking sheet with foil and place a wire rack on top. Place the seasoned ribs.
Place the wire rack in the middle. Place the baking sheet with the ribs inside and bake for 2 hours and 15 minutes in the preheated oven depending on your oven. Check the ribs and bake more if needed until you achieve your preferred tenderness. You want it to be tender with a little resistance when you poke it with a toothpick. Remove from the oven once done.
Turn your oven to 425F.
Add BBQ sauce to your ribs and place back in the oven for about 5 to 6 minutes until it caramelizes. After that, remove them from the oven and let them rest covered for about 25 to 30 minutes. Serve and enjoy!
