Step 1
Preheat your oven to 350°F, then grease an 8-inch round cake pan with nonstick cooking spray or melted butter, and set it aside. Beat together the eggs and sugar for about 6 to 7 minutes until light and fluffy, add the oil, and keep mixing to combine. Pour in the milk and give them a good mix, then sift over the flour, cocoa powder, baking powder, and salt, and fold them until just incorporated making sure not to overmix.
Step 2
Pour the batter into the prepared pan spreading it evenly, then allow it to bake for about 25 to 30 minutes or until a toothpick inserted at the center comes out clean, and let it cool down. Place a medium-sized saucepan on a stove over medium-high heat, then heat the sugar, and stir it occasionally until melted and caramelized. Reduce the heat, then add the butter, and stir it until melted completely.
Step 3
Pour in the heavy cream, then give them a good stir until smooth and combined, and turn off the heat. Add the peanuts and keep stirring, then set it aside, and prepare the cream mixture. Beat together the cream cheese, powdered sugar, and vanilla extract in a large bowl until smooth, then add the cold heavy cream, and whip them until fluffy.
Step 4
Cut the top of the cake to make it flat, then divide it into two, and spread the cream over the first layer. Gently spread the caramel over the cream layer, then place the second layer of cake, and gently press it down. Place it in the refrigerator, then let it chill for at least 2 hours, and while waiting, prepare the chocolate glaze.
Step 5
Chop the chocolate and place it in a heat-proof bowl, then heat the heavy cream, and pour it over the chocolate. Let it sit for about 2 minutes, then stir them until smooth and melted, and mix in the chopped peanuts. Pour the ganache over the cake, then place it in the refrigerator, and let it chill for at least 30 minutes. Serve and enjoy!
