I love eating soup at every mealtime and I feel like a good lunch or dinner wouldn’t be complete without a soup on the side. It just makes any dish taste even better than it already is and there are a lot of different kinds of soup recipes that you can try.

Ingredients for Broccoli Cheese Soup:
- 3 tbsp of unsalted butter
- 1 cup chopped yellow onion
- 2 carrots, peeled and chopped into small pieces
- 4 cloves of garlic, minced
- 1 tsp of kosher salt divided
- ½ tsp of ground black pepper
- 3 tbsp of all-purpose flour
- 4 cups low-sodium chicken broth
- 2 cups half and half
- 1 tsp of dry mustard powder
- ½ tsp of paprika
- 1 head of broccoli, cut into bite-sized pieces
- 8 oz sharp cheddar cheese, shredded
How to Make Broccoli Cheese Soup:
Step 1
Place a large Dutch oven on a stove over medium heat, then melt the butter, and add the onions and carrots. Season them with ½ teaspoon of salt and pepper, then give them a good toss, and cook them for about 5 minutes or until softened.
Step 2
Add the garlic and keep cooking for an additional 2 minutes, then gradually pour in the broth while whisking continuously, and stir in the half and half. Increase the heat to medium-high, then bring it to a simmer while stirring occasionally, and once thickened, reduce the heat to low.
Step 3
Add the broccoli, mustard powder, paprika, and remaining salt, then give them a good stir, and cover the Dutch oven with the lid. Cook the soup over low heat, then let it simmer for about 15 minutes or until the broccoli is tender.
Step 4
Add a handful of shredded cheese at a time, then stir consistently until smooth, and adjust the salt to taste. Ladle the soup in serving bowls, then top it with more cheese, and serve immediately. Enjoy!
