This cheesecake does not only taste incredibly creamy and delicious, but it also bears a resemblance to the flag which is very fitting to the occasion, plus this is super easy and simple to make, and you can even make it ahead of time and serve it the day of the event.

Step 1
In a large mixing bowl, add the graham crackers, sugar, cocoa powder, and melted butter, then mix them all together until fully combined and crumbly. Transfer and spread them on the bottom of a 9×11-inch baking dish, then press them down the bottom and sides until smooth and even, cover the baking dish with plastic wrap, and place it inside the refrigerator to chill for about 30 minutes or until set. In another large mixing bowl, add the cream cheese and mascarpone cheese, then break and fold them together until incorporated and combined, add the lemon zest, lemon juice, and vanilla extract, and continue to mix them to combine.

Step 2
In a separate bowl, whisk together the sugar and whipping cream until fluffy and soft peaks form, then add it to the cream cheese mixture, and gently whisk them together until soft and combined. Scoop the cream mixture onto the chilled graham cracker crust, then spread it out evenly and smoothly, and gently tap the baking dish on the counter. Cover it with plastic wrap, then put it back in the refrigerator, and let it chill for at least 3 hours to set. Once ready, start decorating the cake with strawberries and blueberries as shown in the video, then slice, and serve. Enjoy!
