This would be a great after-school snack for the kids or you can even serve it for breakfast if you want. If you want to take your version of this dish to the next level, then add in any extra ingredient that you want, whatever it is that you choose, one thing’s for sure, you’ll end up with a perfect rice pudding no matter what.
Step 1
Place a large pot on a stove over medium heat, then add 3 cups of milk, water, rice, sugar, and salt, and bring it to a simmer while stirring consistently for about 15 to 25 minutes. Once it starts to bubble, reduce the heat to low, then let it cook for an additional 25 to 35 minutes or until the rice is soft and the mixture has thickened, and make sure to keep stirring to prevent the rice from burning. In a separate bowl, add the egg, then beat it, pour in the remaining milk slowly, and stir it in until incorporated.
Step 2
Once the egg is at the right temperature, pour it into the rice mixture while stirring continuously, then add the raisins and vanilla extract, and let them continue to cook for an additional 3 minutes or longer depending on the thickness. Turn off the heat, then remove the pot from the stove, add the butter and cinnamon (if using), and mix them well until incorporated. Let it cool down completely or serve warm, then garnish with cinnamon and cherries if desired, and enjoy!
