This version makes the creamiest and smoothest rice pudding that you can ever taste, and it doesn’t even take a lot of effort to make.

Ingredients for New York Deli-Style Rice Pudding:

  • 3½ cups of whole milk, divided
  • 5 cups of water
  • 1 cup of medium-grain rice, uncooked
  • ½ cup of granulated sugar
  • 1 pinch of fine sea salt
  • 2 tsp of vanilla extract
  • 1 large egg
  • ½ cup of raisins
  • 1 tbsp of unsalted butter
  • Ground cinnamon, plus more for garnish
  • Maraschino cherries, for garnish, optional

How to Make New York Deli-Style Rice Pudding:

Step 1

Place a large pot on a stove over medium heat, then add 3 cups of milk, water, rice, sugar, and salt, and bring it to a simmer while stirring consistently for about 15 to 25 minutes. Once it starts to bubble, reduce the heat to low, then let it cook for an additional 25 to 35 minutes or until the rice is soft and the mixture has thickened, and make sure to keep stirring to prevent the rice from burning. In a separate bowl, add the egg, then beat it, pour in the remaining milk slowly, and stir it in until incorporated.

Step 2

Once the egg is at the right temperature, pour it into the rice mixture while stirring continuously, then add the raisins and vanilla extract, and let them continue to cook for an additional 3 minutes or longer depending on the thickness. Turn off the heat, then remove the pot from the stove, add the butter and cinnamon (if using), and mix them well until incorporated. Let it cool down completely or serve warm, then garnish with cinnamon and cherries if desired, and enjoy!
