This easy millionaire’s shortbread recipe by Preppy Kitchen is the perfect treat to satisfy your sweet cravings. How can you even resist these rich caramel bars? It has three different layers – shortbread on the bottom, caramel in the middle, and chocolate ganache on top. To balance out the sweet flavors, sea salt flakes are sprinkled on top. It tastes absolutely amazing, and the chocolate ganache on top even melts in your mouth.

What I love most about this recipe is that it only requires simple baking ingredients. Plus, it is very easy to make. I already have all of them at home, so I tried this recipe right away. My house smelled amazing after making these delicious caramel squares. Everyone rushed and got one slice when it was ready. They said it tastes heavenly. I enjoyed it with a hot cup of coffee, or you can also pair it with your favorite tea.

Start by preheating your oven to 350f and lining a 9×9 inch baking dish with either parchment paper or foil.
Cream 1 cup of unsalted butter. Next, add the sugar and salt. Beat well until it becomes light and fluffy. Mix in the vanilla and egg yolk. Gradually add the flour and mix until just combined.
Transfer the mixture to the prepared pan and spread evenly. Place inside the oven and bake at 350f for about 22 minutes.
While it’s baking, make the caramel. A candy thermometer will be handy but you are not required to get one. In a small saucepan, add the butter, brown sugar, salt, vanilla, sweetened condensed milk, and golden syrup. Mix until well combined.
Place the saucepan over medium heat and whisk until melted. Continue whisking while it bubbles and darkens in color. Once it reaches 225F, it will start to thicken and pull away from the edge of the pan for about 5 to 6 minutes. The caramel is done.
Gently pour the caramel onto the shortbread base and smoothen the edges to create a flat layer. Let it chill for about 10 minutes to allow the caramel to set.
Chop the chocolate and place in a heat-proof bowl. Add the cream and melt in a double boiler or in the microwave for about 2 to 3 20-second bursts. Make sure to stir in between.
Pour the melted chocolate over the caramel and smoothen. Sprinkle salt on top if preferred. Let it chill before slicing. Enjoy!
