Ingredients for Mexican Shipwreck Casserole:

  • 1 pound of ground beef
  • 1 packet of taco seasoning
  • ¼ cup of water
  • 1 cup of milk
  • (10oz) can of Rotel tomatoes, mild
  • 1 (7.25oz) box of Kraft macaroni & cheese
  • 1 cup of frozen fajita vegetables, sliced peppers & onions
  • Salt and pepper, to taste
  • 1 cup of Mexican shredded cheese
  • Sliced green onion or chopped parsley, for garnish, if desired

How to Make Mexican Shipwreck Casserole:

Step 1

Place a large skillet on a stove over medium-high heat, then add the ground beef, and break it apart. Cook the beef until no longer pink, and then drain off the excess grease.

Step 2

Add the taco seasoning, water, Rotel tomatoes, macaroni & cheese, milk, and frozen vegetables, then mix everything until combined, bring it to a boil, and season it with salt and pepper to taste.

Step 3

Lower the heat to medium, then put the lid on the pan, and let the macaroni cook until tender. Check frequently and add water if needed, then stir the mixture consistently to make sure the noodles don’t stick to the bottom.

Step 4

Remove the lid, then place the shredded Mexican cheese on top, and put the lid back on. Let it cook for a few minutes until the cheese has melted, then garnish with green onion or parsley, and serve. Enjoy!
