Mexican street corn is one of my favorite foods to make and it’s so good that I can finish eating it quickly in just one sitting! But when I tried this recipe by Rose Oatley on YouTube, I immediately had a new favorite.

Ingredients for Mexican Corn Skillet:

  • 4-6 corn on the cob
  • 1 red and 1 green bell pepper
  • ¼ red onion, diced
  • 1 bunch of cilantro
  • 4 tbsp of butter
  • 1-2 tbsp of olive oil
  • Salt and pepper, to taste
  • 1 tsp of cumin
  • ½ tsp of oregano
  • 1 tsp of minced garlic
  • ½ cup of Cotija cheese
  • ½ lime, juiced
  • 3 tbsp of mayonnaise
  • Squeeze margarine
  • ½ cup of Cotija cheese
  • Mexican Crema (table cream)
  • Chili powder or Tajin
  • ½ lime, juiced, for serving

How to Make Mexican Corn Skillet:

Step 1

Remove the corn from the cob, then chop the veggies, and preheat your skillet on a stove over medium heat. Add the butter and let it melt, then add the corn, and give them a good mix. Spread and flatten the corn, then let it sit unattended for a couple of minutes, move the corn around, and repeat as much as you want until charred to your liking.

Step 2

Push the corn to the side, then add some olive oil to the empty side of the skillet, and saute the onions and peppers. Mix everything together, then turn the heat to low, and season them with salt and pepper. Add the cumin, oregano, cilantro, and minced garlic, then mix in between each addition to combine, add the Cotija cheese, and keep mixing until incorporated.

Step 3

Turn off the heat, then add the mayonnaise and juice of half a lime, and mix well to combine. Spread the corn mixture evenly and flatten, then drizzle the Margarine all over the top, and sprinkle more Cotija cheese on top. Drizzle the table cream, then sprinkle some chili powder, and squeeze the other half of the lime. Serve and enjoy!
