Meatloaf is always present at any gathering in our family. We have a celebration soon, and I was assigned to make it. I found this easy meatloaf recipe by The Danni Rose on Youtube and thought I should try it before I make one for the event. I also realized that I don’t have a loaf pan at home, so this was perfect. It was surprising how it turned out! I couldn’t believe how juicy, moist, and flavorful it was. It’s definitely one of the best recipes I made in a while.
For the glaze:

Break the bread slices into small pieces then place them in a bowl. Add 1 cup of milk, soak the bread, and mush it. Set it aside.
Place the ground meat into a bowl. Add the egg/s, chopped bell pepper, chopped onion, Worcestershire sauce, onion and garlic powder, salt, black pepper, beef bouillon, soaked bread, and bbq sauce. Mix everything until well combined. Do not overmix it.
Cover your sheet pan with aluminum foil. Take another 2 pieces of foil, the same size as the pan, then lay them on top of each other making a cross. Roll the edges until they fit in the sheet and look like a pan. Add more foil to deepen and reinforce the sides. Be sure that the sides are sturdy enough to hold your meatloaf. Grease it with cooking spray.
Transfer the meat mixture to your premade pan and form it into a loaf. Make sure you secure the edges, as you want to trap the juices.
Place inside the oven and bake at 350F for 50 minutes.
Make the glaze. Combine 1 cup of ketchup, 1/3 cup of bbq sauce, and 3 tablespoons of Worcestershire sauce in a bowl.
Remove the meatloaf from the pan and place it on your serving plate. Disregard the sauces. Cover it with the glaze, then place it on your broiler for 5 minutes on high.
Let it rest for 5 to 10 minutes before slicing. Enjoy!
