Ingredients for Spicy Maple Carrots:

  • 1.2 pounds of carrots, peeled, and cut into quarters

Spicy Maple Sauce

  • 3 tbsp of maple syrup or 2.5 tbsp of honey
  • 2 tbsp of sriracha
  • 1½ tbsp of olive oil
  • ¼ tsp of salt
  • ¼ tsp of black pepper

Crispy Chickpeas

  • (14 ounces) can of chickpeas, drained
  • 1 tbsp of olive oil
  • ½ tsp of smoked paprika
  • ¼ tsp of garlic powder
  • ¼ tsp of onion powder
  • ¼ tsp of salt
  • ¼ tsp of black pepper

Yogurt Sauce

  • 1 cup of plain yogurt
  • ½ tsp of garlic, finely grated
  • 1 tbsp of lemon juice
  • 1 tbsp of extra virgin olive oil
  • ¼ tsp of salt

Garnish

  • 2 tbsp of coriander or cilantro, finely chopped
  • 3 tbsp of toasted pistachios, finely chopped

How to Make Spicy Maple Carrots:

Step 1

Prepare the carrots, then add them to a baking sheet, and mix the honey, sriracha, olive oil, salt, and black pepper until incorporated. Pour the maple sauce over the carrots, then give them a good toss, and place the chickpeas on a separate baking sheet in a single layer.

Step 2

Place them both in a preheated oven, then allow them to bake at 425°F or 200°C, and after 10 minutes, remove the chickpeas from the oven. Add the olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper, then give them a good toss, and put them back in the oven to bake for an additional 20 to 25 minutes or until crispy.

Step 3

Roast the carrots for a total of 30 minutes, then toss them once halfway, and finish cooking until the edges are caramelized and soft. In a plate, mix the yogurt, garlic, lemon juice, olive oil, and salt until uniform, then place the carrots on top, and garnish with chopped herb and toasted pistachios. Serve and enjoy!
