But with this pizza casserole recipe from Dot2Trot’s Low Carb Living on Youtube, you can have pizza while eating low carb. Ingredients:

  • 1 tbsp ghee (or other fat)
  • 1 & 1/2 lb ground pork sausage (casing removed)
  • 2 cup sliced mushroom
  • pinch of sea salt
  • 1 cup pizza sauce
  • 2 plum tomatoes (diced)
  • 2 tbsp basil leaves (sliced)
  • 1 cup mozzarella cheese (shredded)
  • 2 oz pepperoni slices

Directions:

Step 1

Preheat the oven to 400 degrees F and grease your casserole dish with ghee; set aside. Next, in a pan over medium heat, break your ground pork sausage and cook it. While the sausage is cooking, in a pot over low heat, add a bit of olive oil, then add 1 cup pizza sauce followed by the chopped tomatoes and thinly chopped basil leaves. Stir well to combine and simmer in high heat. Once the sausage is cooked, drain all the excess grease, and then layer it on the bottom of the casserole dish. Spread it nicely and evenly. Next, heat up about a tablespoon of olive oil in a pan and saute the sliced mushrooms until they are softer. Season with a bit of salt.

Step 2

After sauteing the mushrooms, layer them on top of the ground pork. After this, pour over the pizza sauce and spread it nicely and evenly. Add 1 cup shredded mozzarella cheese on top followed by 2 oz pepperoni slices. Place it in a preheated oven of 400 degrees F and bake for about 20 – 25 minutes.
