This version is so good and creamy that you won’t be able to stop eating it until it’s all gone. It’s loaded with bacon bits and has the perfect balance of cream and cheese, this is even better than store-bought! Try making this today, you won’t regret it for sure.
Step 1
Wash the potatoes, then cut them into 6 large chunks, and put them in a large pot. Season them with some salt, then fill the pot with water until the potatoes are covered, and place the pot on a stove over high heat. Bring it to a boil, then reduce the heat to medium, and let it simmer for about 30 to 40 minutes or until fork tender.
Step 2
While waiting for the potatoes to cook, slice the potatoes into small pieces, then put them in a skillet on a stove over medium heat, and cook them until nice and crispy. Turn off the heat, then remove the cooked bacon bits with a slotted spoon, and place them on a plate lined with a paper towel to drain off the excess oil.

Step 3
Place the skillet on a stove over medium heat, then add about ¼ tablespoon of butter, and saute the onions for about 3 minutes. Add the garlic and thyme, then stir, and continue to cook for 2 minutes more before reducing the heat to low. Add the remaining butter, then pour in the whipping cream, and add in about half of the shredded cheese.
Step 4
Give them a good mix and turn off the heat. Once the potatoes are cooked, drain off all the water, then place the potatoes in a strainer or similar, and let them sit for a few minutes until they’ve dripped off all the excess water. Transfer the drained potatoes back into the pot, then make sure that the heat on the stove is turned off.
Step 5
Add everything into the pot of boiled potatoes, then add in the remaining shredded cheese along with the bacon bits, and mash everything together until well combined. Sprinkle the sliced green onions on top, then serve, and enjoy!
