When I first saw this recipe by All Wings Everything on YouTube, I immediately knew that I had to give it a try. It was one of the best fries I’ve ever had and I wouldn’t want it served any other way, you can serve these fries with more toppings of your choice and loaded with lots of cheese if you want, too.

Ingredients for Loaded Skillet Steak & Fries:

French Fries

  • 5-6 Russet potatoes, cut into fries
  • 2 tbsp of olive oil
  • 2 tbsp of cornstarch
  • 1 tsp of salt
  • 1 tsp of garlic powder
  • ½ tsp of black pepper
  • ½ tsp of cumin

Steak Marinade

  • 1½ pounds of flank or skirt steak
  • 1/3 cup of olive oil
  • ½ cup of cilantro
  • Juice of limes
  • 1 tsp of chili powder
  • 1 tsp of cumin
  • 2 tsp of salt
  • 1 tsp of black pepper
  • Garlic, chopped

Pica De Gallo

  • 2 tomatoes, diced
  • ½ onion, diced
  • ¼ cup of cilantro, chopped
  • jalapeño, chopped
  • Juice of lime
  • Salt, to taste
  • Chopped cilantro

For Serving

  • 1 cup of cheddar cheese
  • ¼ cup of cilantro, chopped

How to Make Loaded Skillet Steak & Fries:

Step 1

In a large bowl, add the steak, lime juice, olive oil, cumin, chili powder, chopped garlic, and chopped cilantro. Give them a good mix to combine, then set it aside, and let the steak marinate for about 1 hour or more. In another bowl, add the diced tomatoes, diced onions, chopped jalapeño, cilantro, lime juice, and salt, then mix them well, and add more lime if desired.

Step 2

Put it in the fridge and set it aside until needed. In a separate bowl, mix the cornstarch, garlic powder, salt, cumin, black pepper, and olive oil until incorporated, and drizzle it over the potato fries in a separate large bowl. Toss everything together until evenly coated, then transfer them to a wire rack placed on top of a baking sheet lined with aluminum foil, and spread them in a single layer evenly.

Step 3

Place the fries in a preheated oven at 400°F, then bake them for 15 minutes, flip them over, and bake for another 10 to 12 minutes. Place a griddle on your stovetop or use a skillet instead, then brush it with oil, and sprinkle some salt. Once hot, add the marinated steak, then cook them for about 4 to 7 minutes per side, and set them aside to rest for a couple of minutes.

Step 4

Cut the cooled steak into thin strips, then place the fries on a cast-iron skillet pan, top them with lots of cheese, and put them back in the oven to bake for about 5 minutes until melted. Add the steak on top of the cheese layer, then add the pica de gallo over them, and garnish with some chopped cilantro. Serve and enjoy!
