Instead of serving fries the usual way, prepare them in a skillet pan instead, then fill them with lots of cheese, chorizo, and bacon, and then drizzle them with a yummy homemade sauce. Ingredients:

  • 2 tbsp of mayonnaise
  • 1 tbsp of ketchup
  • 1 tsp of sriracha
  • 1 medium or ½ large onion, chopped
  • 1 chorizo, sliced diagonally, then sliced in half
  • 4 strips of bacon, chopped into bite-sized pieces
  • Fries
  • Oil, for frying
  • Grated cheddar cheese
  • Chopped chives, for garnish

Directions:

Step 1

In a small mixing bowl, add the mayonnaise, ketchup, and sriracha, then stir them together until well combined, and set the sauce aside in the fridge until needed. Chop the onion, then slice the chorizo diagonally before slicing them in half, and chop the bacon strips. Place an oven-safe skillet on a stove over medium heat, then drizzle some oil, and allow it to heat up before adding the chopped onions. Give them a good toss and saute for a good minute, then add the sliced chorizo and chopped bacon, and cook them together until brown and crispy.

Step 2

In a separate pan, deep fry the fries at 350°F or 170°C, then season them with salt and place them in the skillet where you cooked the chorizo and bacon making sure to remove them first. Now, put the cooked chorizo and bacon back into the pan and on top of the fries, then sprinkle a generous amount of grated cheddar cheese all over them, and grill them in the oven for a few minutes or just until the cheese has melted. Once done, remove the pan from the oven, then pour the sauce all over the top, and garnish with chopped chives. Serve and enjoy!
