Ingredients for Deviled Egg Pasta Salad:

  • 8 ounces of elbow pasta
  • hard-boiled eggs
  • ¼ cup of yellow onion, chopped
  • ¾ cup of mayonnaise
  • 2 tbsp of Dijon mustard
  • 1 tbsp of apple cider vinegar
  • ½ tsp of salt
  • ¼ tsp of ground black pepper
  • 4 slices of bacon, cooked and crumbled
  • (2oz) jar of chopped pimentos, drained
  • 1 cup of shredded cheddar cheese
  • 1 tbsp of chopped fresh chives
  • ⅛ tsp of paprika

Step 1

Cook the elbow pasta according to the package instructions, then drain off all the water, and let them cool slightly. Reserve 1 whole egg for later, then separate the yolks of the rest of the eggs and set them aside. Chop the egg whites, then place the egg yolks in a large bowl, and mash them with a fork.

Step 2

Add the chopped onion, mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper, then mix everything until combined. Add the cooked pasta and egg whites, then add ¾ of the bacon followed by the pimentos and shredded cheese, and toss them to combine.

Step 3

Transfer the mixture to a large serving bowl, then slice the reserved egg, and place it on top of the salad. Sprinkle the remaining bacon along with the chopped chives and paprika, then place the salad in the refrigerator, and let it chill until ready to serve. Enjoy!
