It’s also super easy to make, fuss-free, and is a one-bowl recipe. This will become a staple recipe for every gathering you will have, I’m sure of it. Ingredients:

  • 1 unbaked pie crust, single
  • 1 & 1/2 cups granulated sugar
  • 1 cup buttermilk, room temperature
  • 4 large eggs, room temperature
  • 1/2 cup unsalted butter, melted
  • 3 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • 1/4 tsp kosher salt
  • 1/4 cup all-purpose flour

Directions:

Step 1

Preheat the oven to 350 degrees F and place the unbaked pie crust into a standard 9″ pie plate. Keep it in the refrigerator while making the filling. Next, in a large mixing bowl, add 1 & 1/2 cups of sugar followed by 1/2 cup of melted unsalted butter, 4 large eggs, 1 tsp of vanilla extract, 1/4 tsp of salt, and 1 cup of buttermilk. Remove the zest of 1 lemon (about 1 tsp) and add it to the mixture then add 3 tbsp of freshly squeezed lemon juice. Whisk it all together until it’s smooth. After this, add 1/4 cup of all-purpose flour and whisk it in until there’s no lump.

Step 2

After the consistency becomes smooth, pour the filling into the prepared unbaked pie crust. Place the pie in the preheated oven at 350 degrees F and bake it for one hour until the top is golden brown and crackly. After baking, let the pie cook for at least 45 minutes before slicing.
