Whipped Cream
Step 1
Preheat your oven to 350°F, then line a rimmed baking sheet with parchment paper, and lightly grease with nonstick cooking spray. Prepare the cake mix according to the package instructions, then pour it into the prepared pan, and spread it evenly. Place it in the preheated oven, then allow it to bake for about 20 minutes or until light golden brown, and flip it over on a lint-free kitchen towel dusted with ¼ cup of powdered sugar.

Step 2
Starting from one short end, roll the cake over until you’ve reached the other short end, then set it aside, and allow it to cool down to room temperature before placing it in the fridge to cool completely. In a large mixing bowl, add the cream cheese, then beat it until smooth, and add the powdered sugar, cream, lemon juice, lemon zest, and vanilla. Continue beating the ingredients together until combined and fluffy, then add a few drops of food coloring if desired, and mix until incorporated.
Step 3
Once the cake is completely cool, unroll the cake, then spread half of the filling, and top with the blueberry pie filling spreading it nicely. Carefully roll the cake back up without the towel, then lay the cake with its edges facing down, and cover it completely with the remaining cream cheese filling. In a mixing bowl, beat together the cream and powdered sugar until stiff peaks form, then pipe over the cake roll, and garnish with lemon slices and fresh blueberries if desired. Serve and enjoy!
