As a workaholic, I tend not to have proper dinners during weekdays because I just can’t squeeze them into my schedule. That is why I’m looking for easy dinner recipes that I can whip in less than an hour. While browsing Youtube the other day, I found this king ranch casserole recipe from Simply Mamá Cooks on Youtube. It looks so good that I immediately try it out. And boy, this is by far my favorite casserole dish of all time! Try this today and see for yourself.

Ingredients:

  • 1 lb cooked chicken, shredded
  • 10 corn tortillas
  • 8 oz Colby jack cheese
  • 10 oz can of Rotel tomatoes & green chilies
  • 4 oz softened cream cheese
  • 4 tbsp unsalted butter
  • 4 tbsp all-purpose flour
  • 1/4 tsp granulated onion powder
  • 14.5 oz can of chicken broth
  • 1 chipotle pepper in adobo sauce (optional)
  • salt and pepper, to taste

Directions:

Step 1

In a saucepan, melt 4 tbsp of unsalted butter over low heat, then add 4 tbsp of all-purpose four and 1/4 tsp granulated onion powder. Whisk well until well combined. Next, add one chopped chipotle pepper in adobo sauce (optional) and a 14.5 oz can of chicken broth. Mix and bring it to a simmer. Let it thicken a little, then add 4 oz softened cream cheese. Mix until the cream cheese is fully combined with the sauce. Finally, add a 10 oz can of Rotel tomatoes & green chilies, give it a mix, and let it simmer. (Taste test at this point and add salt and seasoning.) Next, add the shredded chicken to a large bowl, then season with onion powder, smoked paprika, garlic salt, and cracked black pepper. Mix together well. After this, stack ten corn tortillas and cut them in half.

Step 2

Now, start assembling the casserole. Add some cream cheese sauce at the bottom, then layer the corn tortillas, covering the whole surface. After this, put a layer of shredded chicken, then shredded cheese, and another layer of cream cheese sauce. Repeat these steps until your casserole dish is full. After this, cover it with aluminum foil and place it in a preheated oven at 400 degrees F and bake for 30 to 35 minutes. After baking, remove it from the oven and let it cool a bit before serving.
