Step 1
Cut the chicken into small ½-inch cubes, then in a mixing bowl, whisk together the buttermilk, salt, and egg until combined, and add in the chicken pieces. Stir them around to coat, then place them in the refrigerator, and let them marinate for at least 1 hour but not more than 24 hours. Prepare the breading mixture by combining the flour, cornstarch, and 11 herbs and spices in a large bowl until uniform, then drizzle 3 tablespoons of the marinade, and clump until you get lots of small lumpy bits.
Step 2
Place a large saucepan or deep skillet on a stove over medium-high heat, then preheat your oven to 125°F to keep the chicken warm, and start breading the marinated chicken, make sure to separate the pieces and press them hard. Shake the excess flour, then coat them again, and place them in a baking tray making sure they are separate from each other.
Step 3
Line a baking sheet with paper towels, then add the oil to the hot skillet, and fry the chicken in batches for about 2 minutes or until crispy and golden. Scoop them out with a spider, then spread them out on the prepared baking sheet, and put them in the warm oven while cooking the remaining chicken. Serve with your favorite dipping sauce and enjoy!
