Who would’ve thought that preparing baked chicken can be so easy? I’m so glad that I found this recipe by Whip It Up With Jay on YouTube because it’s so good and flavorful that my family kept asking me to make them again. I have never tried any other version ever since I tasted this one and I am planning to tweak the ingredients a little bit to take it to the next level and make it loaded!

Ingredients:

  • 4 chicken leg quarters
  • 1 tbsp of ground black pepper
  • 1 tbsp of paprika
  • ½ tbsp of salt

Seasoning Mixture

  • Curly parsley
  • 1 head of garlic, peeled
  • onion, peeled, and cut in half
  • Fresh thyme
  • 4 stalks of green onion
  • 1 red bell pepper
  • habanero pepper
  • 2 tbsp of oil
  • A splash of water

Directions:

Step 1

Cut off the top of the bell pepper, then remove the seeds, chop them into smaller pieces, and do the same with the habanero pepper. Peel the onion and cut them in half, then the garlic cloves as well, and add them to the blender along with the parsley, thyme, oil, and water. Blend them all together until smooth consistency and set them aside, then clean and wash the chicken, and pat them dry.

Step 2

Place the chicken in a large mixing bowl, then pour the blended seasoning, and sprinkle the ground black pepper, paprika, and salt mixed together all over the chicken. Massage the seasoning into the chicken making sure to season under the skin and in all crevices, then place them in a baking dish, and place them in a preheated oven at 350°F. Allow them to bake for about 1 hour, then baste the chicken with the juice, and sprinkle some parsley on top. Serve and enjoy!
