Ingredients:

  • 2 (15 ounces) cans or 2 cups of yams
  • 2 boxes of Jiffy cornbread mix
  • 1 (14 ounces) can of Magnolia sweetened condensed milk
  • 1 egg
  • ½ cup of dark brown sugar
  • ½ tsp of cinnamon
  • ¼ tsp of nutmeg
  • ½ cup of melted butter
  • ¼ cup of milk
  • ½ tsp of vanilla extract
  • 1 drop of red food coloring, optional
  • 1 drop of yellow food coloring, optional

Butter Glaze

  • 2 to 3 tbsp of butter, melted
  • 1 tbsp of dark brown sugar

Directions:

Step 1

Transfer the yams to a large mixing bowl, then beat it with a handheld mixer until smooth, and set it aside. In a separate large mixing bowl, sift the cornbread mix to avoid having big lumps, and then add the mashed yams followed by the condensed milk, egg, ground cinnamon, nutmeg, and brown sugar. Mix them all together until well combined and incorporated, then add the melted butter, vanilla extract, and food coloring making sure to mix them well in between each addition until fully combined.

Step 2

Grease the baking dish with a nonstick cooking spray, then pour the batter spreading it evenly, and tap it on the surface a few times to remove any trapped air bubbles. Place it in the middle rack of a preheated oven, then allow the cake to bake at 350°F for about 45 minutes, or until a toothpick or knife inserted at the center comes out clean. In a separate bowl, add the melted butter and dark brown sugar, then stir them together until well combined and dissolved, and then brush it all over the cake once done baking. Serve and enjoy!
