It was cold last night, so warm and delicious dish for dinner is perfect. I saw this easy homemade zuppa toscana recipe by Mr. Make It Happen on Youtube and made it right away. Ingredients:

  • 1 lb of hot or mild Italian sausage
  • 1 onion (diced)
  • 3 cloves of garlic (minced)
  • 6 cups of chicken stock
  • 1 cup of heavy cream
  • 5 slices bacon (sliced into small pieces)
  • 2 to 4 russet potatoes (peeled and sliced thinly then quartered)
  • 3 handfuls of chopped kale
  • 2 tablespoons of better than bouillon roasted garlic
  • 1/4 cup of parmesan cheese
  • salt, pepper, garlic paste, onion powder, Italian seasoning, red pepper flakes

Instructions:

Step 1:

Get a large pot, add a little bit of oil and place it over medium heat. Add the bacon slices and cook until crispy. Once done, remove it from the pot and place it on a plate.

Step 2:

Turn off the heat then add the Italian sausage to the same pot. Break into small pieces and turn the heat to medium. Cook until the sausage is browned, then transfer to a plate.

Step 3:

In the same pot, add the diced onion and garlic paste. Cook for about 2 to 3 minutes. Next, add the better than bouillon roasted garlic, garlic paste, and Italian seasoning. Mix then add salt, pepper, and red pepper flakes. If you are using hot sausage, don’t add the chili flakes unless you want it extra spicy.

Step 4:

Add 6 cups of chicken broth or stock and the potatoes and bring to a boil for about 15 minutes until fork tender.

Step 5:

Add back the sausage and bacon. Mix and add chopped kale. Cover with the lid and cook for a few minutes.

Step 6:

Add the heavy cream and grated parmesan. Mix until well combined. Season it to taste. Serve in individual bowls. Enjoy!
