Step 1

Line an 8-inch square pan with parchment paper, then brush the bottom and sides with oil, and set it aside. Place a small saucepan on a stove over low heat, then add butter, heavy cream, and salt, and heat it until completely melted, set it aside. Place a medium-sized saucepan on a stove over medium heat, then add the sugar, corn syrup, and water, and heat it until the sugar comes to a boil.

Step 2

Wipe the sides of the pan with a pastry brush occasionally to prevent sugar crystals from forming, then clip a candy thermometer on the side, and keep the sugar mixture cooking until it has reached a temperature of 160°C or 320°F. Once it has reached the right temperature, turn off the heat, then immediately and slowly pour in the cream mixture, and make sure to whisk continuously until fully combined.

Step 3

Return the pan to the stove over medium heat, then let it continue to cook until it reaches a temperature of 115°C or 240°F, and make sure not to stir at this point. Turn off the heat, then immediately transfer the caramel over to the prepared baking pan, and set it aside to cool completely. Once cooled down, unmold the caramel from the pan, then cut it into small rectangles, and wrap each in wax paper as shown in the video. Serve and enjoy!
