Ingredients:

  • 2 cups or 500 grams of heavy or whipping cream
  • Ice cold water

Directions:

Step 1

In a large mixing bowl, pour about 2 cups of heavy cream or whipping cream, then using a hand mixer, start beating the cream. The mixture will first thicken, just continue beating for about 4 to 6 minutes or until yellow solid stuff separates from the liquid. You can also do this using a food processor or a stand mixer. Strain the buttery solid stuff of excess liquid. In a large mixing bowl, pour in some cold water, then add a few cubes of ice, and put the butter into the bowl.

Step 2

This will help form the butter even better. Start gently kneading the butter for about 3 to 5 minutes. You can change the ice-cold water as you please. Continue kneading until the butter is completely smooth and soft. Drain the water completely, you can use some cloth to squeeze it out, and you can season it with salt as well. Place the butter on parchment paper, then shape it into a rectangle, cover the butter with parchment completely, and then refrigerate it for an hour.
