Preheat your oven to 350°F, then grease a 2.5-quart casserole dish with gluten-free cooking spray, and set it aside. Cut the gluten-free sandwich bread into medium-sized pieces cubes and set them aside, then place a medium skillet on a stove over medium-high heat, and add the olive oil.
Add the celery and minced garlic, then saute them for about 6 to 8 minutes, and turn off the heat. In a small bowl, mix the salt, onion powder, thyme, sage, and rosemary, then place the bread cubes in a large bowl, and pour in the seasoning blend.
Add the whisked eggs, then give them a good stir to combine, and then add in the sauteed celery and garlic. Continue to stir until incorporated, then pour in the gluten-free chicken broth, and gently mix them until the bread cubes are evenly moist.
Transfer the stuffing mixture to the prepared casserole dish, then spread it evenly, and place it in the middle rack of a preheated oven. Allow it to bake for about 40 to 50 minutes or until the top is golden brown and lightly crisp. Serve and enjoy!
