Luckily, this recipe by Savor Easy on YouTube is a really delightful treat that is not only super easy and quick to whip up but also pretty inexpensive. Try it out now and see for yourself!

Ingredients:

  • ½ cup slightly salted butter

Cream Frosting

  • 4 egg yolks
  • 1/3 cup sugar
  • ½ cup cream
  • 1 tsp vanilla extract

Base

  • 4 egg whites
  • 1/3 cup sugar
  • 1½ cup ground almonds

Topping

  • ½ cup almond flakes

Directions:

Step 1

In a deep pan or saucepan, add the egg yolks and sugar, then break the yolks as you whisk them together until well combined. Add the cream and vanilla extract, then whisk them together to combine before turning on the flame, and let it cook over low heat while whisking constantly for about 7 minutes or until it thickens. Transfer the mixture to a mixing bowl, then let it cool down completely before covering it with plastic wrap. In a separate mixing bowl, add the egg whites, then beat it until frothy before gradually adding the sugar, and continue beating until medium-stiff peaks form. Once the mixture is stiff enough to stand but still has curls at the end, fold in the ground almonds until uniform and fully combined.

Step 2

Transfer the mixture to 2 round pans dividing them evenly, then spread them nice and flat, and bake them in a preheated oven at 170° or 340°F for about 30 to 35 minutes. Place the almond flakes in a sheet pan, then toast in the oven at the same temperature for about 8 minutes. In another mixing bowl, beat the butter, then gradually add the yolk mixture, and continue to beat them together until incorporated and uniform, scrape the sides and bottom. Once the cake base has cooled down, unmold and lay 1 layer at the bottom, then spread some frosting, top with another layer, and cover with the remaining frosting. Cover the top and sides with toasted almonds, slice, then serve, and enjoy!
