Gingerbread cookies are one of the best treats that you can serve during the Christmas season and it’s something that I’m sure no one can say no to. They look almost too adorable to eat but they are too tasty to resist.

Ingredients for Gingerbread Cake:

  • ⅓ cup of unsalted butter, at room temperature
  • ¼ cup of brown sugar
  • 1 egg, at room temperature
  • ½ cup of molasses or honey or maple syrup
  • 1+⅔ cups of all-purpose flour
  • 1 tsp of baking soda
  • A pinch of salt
  • ¾ tsp of cinnamon powder
  • ¼ tsp of ground cloves
  • ⅛ tsp of ginger powder
  • A pinch of nutmeg
  • ⅓ cup of hot water

How to Make Gingerbread Cake:

Step 1

In a large mixing bowl, add the butter and brown sugar, then beat them for about 3 minutes or until light and fluffy, add the egg, and keep mixing until combined. Add the molasses, then continue to mix just until combined, and set the mixture aside.

Step 2

In another mixing bowl, sift together the flour, baking soda, salt, and all of the spices, then whisk them together until uniform, and add the flour mixture to the egg mixture in three batches alternating it with hot water.

Step 3

Use a spatula to mix in between each addition until incorporated, make sure to not overmix, then transfer the batter to an 8-inch square pan greased with butter or nonstick cooking spray and lined with parchment paper.

Step 4

Place it in a preheated oven at 180°C-350°F, then let it bake for about 25 minutes or until a toothpick inserted at the center comes out clean. Once done baking, allow it to cool completely, then trim the edges, and cut the cake into 9 squares. Serve and enjoy!
