Ingredients for German Spice Cookies:

  • ½ cup of honey
  • 1 cup of dark brown sugar
  • ¼ cup of unsalted butter, cut into cubes
  • 1 large egg, beaten
  • 2 tsp of lemon zest
  • 1¾ cups of all-purpose flour
  • 1 cup of ground almonds
  • 1 tbsp of lemon juice
  • tsp of baking powder
  • ½ tsp of baking soda
  • 2 tsp of ground cinnamon
  • ½ tsp of fine sea salt
  • ½ tsp of ground allspice
  • ½ tsp of ground ginger
  • ¼ tsp of ground cloves
  • ¼ tsp of grated nutmeg

Glaze

  • 1 cup of powdered sugar
  • Juice of 1 lemon
  • 1 tsp of vanilla extract
  • 1 tsp of rum, optional

How to Make German Spice Cookies:

Step 1

Add the honey and sugar to a heat-proof bowl, then heat it in the microwave for 30 seconds, and stir it until the sugar has dissolved. Add the butter and lemon zest, then stir until melted, and add the baking powder, baking soda, salt, all of the spices, and egg. Keep stirring until incorporated, then add the flour, ground almonds, and lemon juice, and mix them until soft and slightly sticky dough forms.

Step 2

Coat your hands with some cooking spray, then shape the dough into a ball, and transfer it to a well-oiled bowl. Cover it with a towel, then set it aside in an area at room temperature, and let it rest for at least 1 hour up to overnight. Preheat your oven to 350°F, then in a small bowl, add the powdered sugar, lemon juice, vanilla extract, and rum, and whisk them until smooth and combined.

Step 3

Divide the dough into 3 parts evenly, then roll each dough until ¾ inch thick, and cut out small circles using a cookie cutter. Place them on a baking sheet lined with Silpat, then space them apart evenly, and allow them to bake for about 12 minutes. Do the same for the remaining dough, then transfer them to a wire rack, and brush them with the prepared glaze on top while they’re still warm. Let the glaze set before adding another layer, then serve, and enjoy!
