Funfetti Cake
Vanilla Buttercream
Step 1
Preheat the oven to 350°F, then get three 9-inch round cake pans, line the bottom with a circle piece of parchment paper, and grease the sides. In a large bowl, mix the flour, baking powder, baking soda, and salt until well combined, and set it aside.
Step 2
In a mixing bowl add the butter and sugar, then beat them over medium speed for about 2 to 3 minutes or until light and fluffy, add the vegetable oil and vanilla extract, and continue to beat them until well combined.
Step 3
Add the eggs one at a time while beating continuously, then add half of the dry ingredients, and keep mixing until mostly combined. Slowly add the buttermilk, then mix, add the remaining dry ingredients, and keep mixing until smooth and combined.
Step 4
Add the sprinkles, then fold them in until evenly incorporated, and make sure to scrape the sides and not overmix the batter. Divide the batter evenly between the prepared cake pans, then place them in the preheated oven, and bake them for about 25 to 30 minutes or until a toothpick inserted at the center comes out with a few crumbs.
Step 5
Once done baking, remove the cakes from the oven, then allow them to cool for about 2 to 3 minutes before unmolding them onto cooling racks, and letting them cool down completely. For the buttercream, add the butter in a mixing bowl, then beat it until smooth and creamy, and then half of the powdered sugar mixing them until smooth.
Step 6
Next, add the vanilla extract, water or cream, and salt, then keep mixing until smooth, slowly add the remaining powdered sugar, and continue to mix until nice and smooth, adjusting the consistency as needed.
Step 7
Now assemble the cake and layer them by spreading a bit more than 1 cup of frosting evenly in between each layer as shown in the video, then frost the outside of the cake with the remaining buttercream, decorate it with some sprinkles, and store it in an airtight container. Leave it at room temperature for about 24 hours, then transfer it to the fridge, and serve when ready. Enjoy!
