Step 1
Place a pan on a stove over medium heat, then melt the butter, and add the olive oil followed by the sliced onions. Give them a good toss, then season them with salt and pepper, and stir them together before adding the thyme. Cover the pan, then allow the onions to cook for about 20 minutes or until caramelized, and pour the beef stock. Stir them together and bring the mixture to a boil. Spread some butter on the sourdough slice, then scoop some caramelized onions on top, and add lots of cheese.

Step 2
Place another slice of bread on top, then spread butter on top, and flip it over onto a pan making sure that the buttered side is facing down before spreading more butter on top of the bread. Place a clean cast-iron skillet pan on top of the sandwich lightly pressing it down, then let it cook for a few minutes or until nice and brown, and flip the sandwich over. Place the pan back on top of the sandwich and lightly press down, then cook until nice and brown, and repeat with the rest of the sandwiches. Transfer them to a serving plate or dish, then serve, and enjoy!
