Ingredients:

  • 6 eggs, whites, and yolks separated
  • ½ cup of granulated sugar, divided
  • ½ tsp of salt
  • ⅓ cup of milk
  • ¼ cup of oil
  • ½ tsp of vanilla extract
  • 1 cup of cake flour

Filling

  • 10 medium-sized fresh strawberries, plus more for topping
  • ⅓ cup of strawberry jam

Whipped Cream

  • 1⅔ cups of heavy cream
  • 2½ tbsp of granulated sugar

Step 1

In a large mixing bowl, add the egg yolks, granulated sugar, and salt, then whisk them all together until combined and pale, add the milk, oil, and vanilla extract, and continue to mix until well combined. Add the sifted cake flour, then continue to mix until smooth, and set it aside. In the bowl of a stand mixer, add the egg whites, then beat them until fluffy, gradually add the granulated sugar once it becomes bubbly, and continue to whip until medium-stiff peaks form.

Step 2

Add the meringue to the yolk mixture in 3 addition, then fold them as instructed in the video, and then switch the whisk with a spatula before folding them completely for the last time. Grease 2 8-inch pans (don’t use non-stick pans) and line the bottom with parchment paper, then pour the batter evenly and swirl a toothpick around the batter to remove air bubbles. Tap the pan on the counter a few times to make sure that there is no more air inside, then place them each in larger pans filled with hot water, and place them in a preheated oven.

Allow them to bake at 300°F for about 25 to 30 minutes or until a toothpick inserted at the center comes out clean, then gently flip the pan over the wire cooling rack to unmold, remove the paper, and let them cool down completely.
