This crust is perfect for any kind of pie that you’re planning to make, and you can make it ahead of time if you’re hosting a party or gathering.
Step 1
In a food processor, add 1½ cups of the flour, then add the salt and sugar, and process them until combined. Cut the cold butter into small pieces, then add them to the food processor, and pulse them for about 15 seconds or until a dough begins to form.
Step 2
Scrape the bowl, then pour in the remaining flour, and continue to pulse about 4 to 5 times until evenly combined and the desired texture is reached. Transfer the mixture to a large mixing bowl, then add in 4 tablespoons of ice water, and fold them together with a rubber spatula to combine.
Step 3
Pinch some of the dough and if they hold together, then you’re done, but if it doesn’t add 2 or 4 more tablespoons of ice water, and press the dough once more until it comes together.

Step 4
Transfer the dough to a surface, then press the dough together into a ball, and cut it in half. Shape each dough into a disk, then wrap them each in plastic, and place in the refrigerator. Allow the dough to chill for at least 1 hour up to 2 days before using.
Step 5
When ready to bake, remove the dough disk from the fridge, then let them sit at room temperature for about 5 minutes, and start rolling them out to a 12-inch circle. Transfer the dough to the pie plate, then put it back in the refrigerator, and let it chill for at least 20 minutes or freeze for 5 minutes before baking.
