Cupcakes can be quite tricky for some, and for some, I mean me, I do achieve a great and yummy cupcake now but not when I started baking, and I know how difficult that could be. This is why I am sharing this brilliant recipe that I found on YouTube with you, you can learn how to easily make cupcakes without messing up, and it only requires a few simple ingredients, plus, it comes with a tutorial on making cream cheese frosting, too. All thanks to this amazing video tutorial by Cooking With Claudia on YouTube, be sure to check her out!
Cream Cheese Frosting
Step 1
In a large mixing bowl, add the flour, baking powder, and salt, then give them a good whisk to combine, and set them aside. In a separate large mixing bowl, add the butter and sugar, then beat them together until combined and fluffy, and add the eggs one at a time while beating continuously until well combined and incorporated. Add the vanilla extract, then continue to beat them together over medium speed until well combined, and now add the flour mixture and buttermilk alternately while beating continuously.

Step 2
Make sure to stop once everything is just mixed in to not overmix and make the batter runny, then use a spatula to scrape the sides and mix them nicely. Grease the cupcake tin with nonstick cooking spray, then add the cupcake liners, and divide the batter evenly. Preheat the oven to 350°F, then place the cupcakes inside, and allow them to bake for about 20 to 23 minutes or until a toothpick inserted at the center comes out clean. Once done baking, transfer them to a wire cooling rack, then set them aside, and let them cool down.
Step 3
In a separate bowl, add the cream cheese and butter, then beat them together over high speed for about 4 minutes or until fluffy, and gradually add the powdered sugar while beating continuously. Once all powdered sugar is mixed in, continue to mix for about 4 more minutes, then add the vanilla extract, and beat until incorporated. Transfer the frosting to a piping bag with a piping tip, then frost the cupcakes, and add some sprinkles all over them. Serve and enjoy!
