Ingredients

  • 1 tablespoon of extra virgin olive oil
  • 1 small sweet onion (diced)
  • 4 ounces of mushrooms (sliced)
  • 2 cloves of minced garlic
  • 10 ounces of chopped frozen spinach (thawed  and drained)
  • 6 ounces of crumbled feta cheese
  • 8 ounces shredded cheddar cheese
  • 5 large eggs
  • 1/2 cup of milk
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of black pepper

Instructions

Step 1:

Start by preheating your oven to 350 degrees Fahrenheit, then lightly grease a 9-inch deep dish pie plate.

Step 2:

Add olive oil in a large skillet and place over medium-high heat. Once hot, add the onion and mushroom. Saute until softened for about 5 to 7 minutes. Next, add the garlic and cook for a minute or more. After that, add the spinach, cheddar cheese, and feta cheese. Mix until well incorporated. Transfer the mixture to the prepared pie plate and spread evenly.

Step 3:

Get a mixing bowl and add eggs, milk, salt, and pepper. Whisk until well combined, then pour over the spinach mixture onto the prepared plate.

Step 4:

Place in the preheated oven and bake for 40 to 45 minutes or until the eggs are set. Once done baking, let it cool for 10 minutes. Slice and serve on a plate. Enjoy while warm!
